A delicious fall-inspired crumb cake featuring pumpkin and warm spices, perfect for cozy mornings or dessert.

Ingredients

dry ingredients

  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar (packed)
  • 1 cup cake flour
  • 1 tsp pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/3 cup pecans (chopped)

wet ingredients

  • 8 tablespoons unsalted butter (melted)
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 1/2 cup sour cream (or Greek yogurt or buttermilk)
  • 2 tsp vanilla extract

additional dry ingredients

  • 1 cup all purpose flour
  • 1 cup cake flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice (heaping)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix dry ingredients and chopped pecans in one bowl.
  • Combine wet ingredients and mix well.
  • Pour wet mixture into dry ingredients and stir until just combined.
  • Pour batter into a greased baking pan and sprinkle crumb topping on top.
  • Bake for 40 minutes or until a toothpick inserted in the center comes out clean.

Notes

For best flavor, let the cake cool slightly before serving.
