A delicious fall treat combining crunchy popcorn with warm pumpkin spice flavors and optional nuts for added texture.

Ingredients

Popcorn

  • 1/2 cup popcorn kernels
  • 2 tablespoons coconut oil
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter
  • 1/4 cup pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional, toasted) (optional)
  • 2 tablespoons brown sugar (optional, for extra depth) (optional)

Instructions 

  • Preheat the popcorn popper with coconut oil and test kernels. Once popping, add remaining kernels and cover.
  • Pop the popcorn until popping slows, then transfer to a large bowl.
  • In a saucepan, melt butter, add maple syrup, and stir in spices and vanilla. Remove from heat.
  • Pour the warm spice mixture over popcorn, tossing gently to coat evenly. Add nuts or brown sugar if desired.
  • Spread on parchment paper and let cool for 10-15 minutes until set. Serve and enjoy!

Store in an airtight container for up to 3 days for best freshness.
