Ingredients

Dough

  • 240 g whole wheat flour
  • 210 g all-purpose flour
  • 7 g fine sea salt
  • 7 g instant yeast
  • 236 g whole milk lukewarm
  • 60 g molasses
  • 1 large egg
  • 45 g butter melted and unsalted
  • 15 g butter
  • 20 g molasses

Instructions 

  • Whisk together milk, molasses, melted butter, and egg until combined.
  • Mix flours, salt, and yeast in a large bowl. Add wet mixture and stir to form a shaggy dough.
  • Knead the dough for 6 minutes with a stand mixer or 12 minutes by hand until smooth and elastic.
  • Cover and let rise in a warm place for 90 minutes until doubled.
  • Divide dough into 12 portions, shape into balls, place in a lined dish, cover, and rise for 40-60 minutes.
  • Preheat oven to 350°F. Mix remaining melted butter with molasses, brush over rolls, and bake for 25-30 minutes until golden. Cool for 10 minutes before serving.

Notes

Brush with extra molasses after baking for shine and flavor.
