These delicious Raspberry Coconut Bars are a perfect no-bake treat combining fresh berries, shredded coconut, and chocolate for a satisfying snack or dessert.

Ingredients

Fruits

  • 2 cups raspberries (frozen)

Coconut

  • 2 cups Let’s Do Organic Unsweetened Shredded Coconut

Sweeteners & Flavorings

  • 4 tbsp maple syrup
  • dash vanilla
  • pinch salt

Chocolate

  • 1 cup dark chocolate chips

Instructions 

  • Add raspberries, coconut, maple syrup, vanilla, and salt to a food processor and pulse until combined.
  • Transfer mixture to a parchment-lined loaf pan and freeze for 4-5 hours until solid.
  • Remove from pan and slice into bars.
  • Melt chocolate chips and dip each bar into the chocolate, then place on parchment to set.
  • Drizzle remaining chocolate on top, add crushed raspberries if desired, then freeze until chocolate hardens.

Notes

Use frozen raspberries for best results and store the bars in the freezer.
