Enjoy these classic oatmeal cookies with a perfect balance of sweetness and spice, baked to chewy perfection.

Ingredients

Dry ingredients

  • 1 1/2 cups all-purpose flour
  • 3 cups old fashioned rolled oats
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt

Wet ingredients

  • 1 cup unsalted butter (room temperature, 2 sticks)
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions 

  • Mix dry ingredients in a bowl.
  • Cream butter and sugars, then add eggs and vanilla.
  • Combine wet and dry ingredients until just mixed; chill dough.
  • Drop dough onto baking sheet and refrigerate for 15 minutes.
  • Bake at 350ºF (175ºC) for 11-12 minutes.

Notes

For chewier cookies, refrigerate dough longer before baking.
