Ingredients

  • 1 cup red lentils (rinsed)
  • 1 carrot carrot (diced)
  • 1 stalk celery (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • to taste salt and pepper

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery; cook until softened.
  • Add minced garlic and ground cumin; cook for 1 minute.
  • Stir in rinsed red lentils and vegetable broth; bring to a boil.
  • Reduce heat and simmer for 20-25 minutes until lentils are tender.
  • Season with salt and pepper to taste. Serve hot.

Notes

You can add fresh herbs like parsley or cilantro for extra flavor.
