Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery; cook until softened.
Add minced garlic and ground cumin; cook for 1 minute.
Stir in rinsed red lentils and vegetable broth; bring to a boil.
Reduce heat and simmer for 20-25 minutes until lentils are tender.
Season with salt and pepper to taste. Serve hot.
Notes
You can add fresh herbs like parsley or cilantro for extra flavor.
