These decadent cookies combine crunchy toffee bits, gooey caramel, and a hint of cinnamon, finished with a sprinkle of flaky sea salt for a perfect sweet-salty treat.

Ingredients

Dough

  • 2 3/4 cups all-purpose flour
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup unsalted butter (melted and slightly cooled)
  • 2 large eggs
  • 2 teaspoons vanilla extract

Add-ins

  • 1 cup toffee bits
  • 1 cup caramel squares (cut into fourths)
  • 1 cup chopped pecans

Topping

  • to taste flaky sea salt (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone mats.
  • Mix flour, sugars, baking soda, cornstarch, salt, and cinnamon. Add melted butter, eggs, and vanilla; stir until combined. Fold in toffee, caramel, and pecans.
  • Portion dough with two tablespoons, place on baking sheets, top with reserved toppings if desired.
  • Bake for 12 minutes until edges are golden. Immediately sprinkle with sea salt if using.
  • Cool cookies on baking sheet for 10 minutes, then transfer to wire rack to cool completely.

Notes

Chilling the dough enhances chewiness and flavor development.
