A delicious high-protein parfait combining creamy Greek yogurt, caramelized dates, and crunchy salted pistachios for a satisfying treat.
Ingredients
Nuts and Seeds
1/4cuproasted and salted pistachios(chopped or toast raw pistachios and add a pinch of salt)
1tspolive oil(or avocado oil)
4pitted Medjool datesdates(chopped)
2tbspwater(as needed for caramelizing dates)
to tasteflaky sea saltsea salt(such as Maldon)
2tspvanilla bean paste(vanilla bean powder or pure vanilla extract)
2cupsGreek yogurt(non-fat, low-fat, or full-fat)
to tastehoneyhoney(optional, for drizzling)
Instructions
Toast raw pistachios in a dry skillet over medium heat for 2–3 minutes, then let cool and chop.
Heat olive oil in a small skillet, add chopped dates and a pinch of sea salt. Sauté for 2–3 minutes, add water to soften, then remove and cool.
Whisk Greek yogurt with vanilla bean paste until smooth and fluffy.
Divide half the yogurt into two cups, sprinkle with half the pistachios, then add remaining yogurt and top with remaining pistachios, caramelized dates, a pinch of sea salt, and honey if desired.
Serve immediately or refrigerate covered for up to 2 days.
Notes
For extra crunch, add more pistachios or a drizzle of honey on top.
