A delicious vegan dessert featuring sweet cherries with a crunchy almond oat topping, perfect for a cozy treat.

Ingredients

Fruits

  • 800 g frozen sweet cherries
  • 0.25 cup cherry jam ((fruit sweetened))
  • 1 Tbsp lemon juice
  • 0.25 - 0.5 almond extract ((depending on strength))
  • 1.5 Tbsp cornstarch ((mixed with 3 Tbsp cold water))

Crumble Topping

  • ¾ cup quick oats
  • ½ cup almond meal
  • 1 tsp ground cinnamon
  • A good pinch salt
  • ¼ cup almond butter
  • 2.5 Tbsp maple syrup
  • 2 Tbsp coconut oil ((melted))

Optional toppings

  • Vegan-friendly yoghurt, ice cream or custard

Instructions 

  • Preheat oven to 180°C. Cook cherries with jam in a skillet until juice appears, then simmer for 10 minutes.
  • Mix oats, almond meal, cinnamon, and salt. Combine almond butter, coconut oil, and maple syrup; add to dry ingredients.
  • Add lemon juice and almond extract to cherries, thicken with cornstarch mixed with water, then transfer to baking dish.
  • Crumble topping over cherries and bake for 15-18 minutes until golden.

Notes

Keep an eye on the crumble while baking to prevent burning.
