Ingredients

Potatoes

  • 4 medium potatoes, diced

Bell Peppers

  • 1 red bell pepper red bell pepper, diced
  • 1 green bell pepper green bell pepper, diced

Onion

  • 1 medium medium onion, diced

Sausage

  • 1 pound breakfast sausage

Garlic

  • 2 cloves cloves garlic, minced

Spices

  • 1 teaspoon paprika
  • Salt and pepper to taste Salt and pepper (to taste)

Olive Oil

  • 2 tablespoons olive oil

Eggs

  • 4 large large eggs (optional) (optional)

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Add potatoes and cook until soft, about 10 minutes.
  • Add peppers and onion; cook until tender, about 5 minutes.
  • Add sausage; cook until browned, then mix with vegetables. Add garlic, paprika, salt, and pepper; cook 2-3 minutes.
  • (Optional) Make wells, crack eggs into each, cover, and cook until eggs are set. Serve hot.
