Ingredients

  • 2 medium sweet potatoes (cubed)
  • 2 cups fresh spinach

  • 4 eggs eggs (scrambled)
  • 2 breakfast sausages breakfast sausages (cooked and browned)

Fruits

  • 1 avocado avocado (sliced and seasoned)

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon olive oil, salt, and garlic powder, then roast for 25 minutes.
  • Cook sausages in a skillet until browned and cooked through.
  • Scramble eggs gently in a pan with a little butter until fluffy.
  • Slice avocado and season lightly with salt and pepper.
  • Assemble bowls with spinach, then add eggs, roasted sweet potatoes, sausage, and avocado. Drizzle with olive oil or sprinkle with black pepper.
