Ingredients

  • 1 tbsp olive oil
  • 1 cup yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 500 grams ground beef (minced beef), preferably lean
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp salt, to taste
  • ¼ tsp ground black pepper, freshly ground
  • 4 large eggs, free-range for the best flavor
  • 1 handful parsley, fresh, chopped, for garnish

Instructions 

  • Heat olive oil in a skillet over medium heat. Sauté onions for 5-7 minutes until golden.
  • Add garlic and cook for 1-2 minutes until fragrant.
  • Increase heat, add ground beef, and cook until browned, about 8-10 minutes.
  • Stir in spices and salt, cook for 2 minutes. Make four wells, crack eggs into each, cover, and cook 6-8 minutes until whites are set.
  • Garnish with chopped parsley before serving.

Notes

Use fresh eggs for the best flavor and texture.
