Instructions
Prepare the dough by mixing flours, salt, and cold butter until crumbly, then add water to form a dough. Chill for 30 minutes.
Roll out the dough into a circle, then spread pumpkin puree, caramelized onions, goat cheese, and chopped sage on top.
Fold the edges of the dough over the filling, leaving the center exposed, and brush with beaten egg.
Bake at 375°F (190°C) for 40 minutes until golden brown. Garnish with sage leaves, honey, and flaky sea salt.
Notes
For a crisp crust, chill the dough thoroughly before baking.
