These delicious hand pies are filled with roasted acorn squash, caramelized onions, mushrooms, spinach, and cheeses, perfect for a savory snack or meal.

0.5pieceacorn squash(seeds removed)
2tablespoonsolive oil(plus more for squash)
1mediumyellow onion(diced)
1teaspoonhoney
to tastecoarse kosher salt and freshly ground black pepper
1clovegarlic(minced)
1tablespoonfresh thyme(chopped)
0.5teaspooncrushed red pepper flakes
0.25teaspoonground nutmeg
4ouncesbaby portobello mushrooms(chopped)
10ouncesfrozen chopped spinach(thawed)
0.5cupshredded medium cheddar cheese
0.5cupshredded havarti cheese
1boxfrozen puff pastry sheets(thawed)
1eggbeaten egg
1tablespooncold water
Instructions
Roast the squash at 375ºF for 45-60 minutes, then peel and chop into 1/2 inch cubes.
Cook onions with honey in 2 tbsp olive oil until caramelized, about 10-15 minutes.
Add garlic, thyme, nutmeg, and red pepper; cook 1 minute. Sauté mushrooms until browned, about 7 minutes.
Mix squash, onion mixture, mushrooms, spinach, and cheeses. Roll out pastry, cut into squares, fill, seal, and brush with egg wash. Cut slits and bake at 375ºF for 20-25 minutes until golden.
Notes
For a crisper crust, brush with egg wash before baking.
