Ingredients

Dairy

  • 1.25 cups cottage cheese (preferably Good Culture for thicker texture)
  • 2 pcs eggs (room temperature, about 70°F)
  • 2 tbsp milk
  • 2 tbsp maple syrup
  • 1.5 tsp vanilla extract

Dry Ingredients

  • 1 cup flour (King Arthur all-purpose flour recommended)
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt

Instructions 

  • In a bowl, combine cottage cheese, eggs, milk, maple syrup, and vanilla extract; mix until smooth.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add dry ingredients to wet ingredients, stirring until just combined.
  • Heat a non-stick skillet over medium heat and lightly grease.
  • Pour batter onto skillet, cook until bubbles form and edges are set, then flip and cook until golden brown.

Notes

For extra flavor, add chocolate chips to the batter before cooking.
