Instructions
Preheat oven to 350°F (180°C). Line and grease a loaf pan.
Beat eggs and sugar until pale. Add oil, orange juice, and vanilla; mix well.
Sift in flour, baking powder, and salt. Gently fold into batter.
Pour batter into pan, bake 10 min, sprinkle nuts, bake 25–30 min more.
While warm, poke holes and pour maple syrup over. Cool before slicing.
Notes
Ensure not to overmix the batter for a tender crumb.
