Ingredients

Wet ingredients

  • 3 large Eggs
  • 3/4 cup Sugar
  • 2 tablespoons Sugar
  • 1 tsp Vanilla extract
  • 1/2 cup Oil
  • 3/4 cup Orange Juice
  • 1 1/4 cups Flour
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Salt

Dry ingredients

  • 1 cup Pecans/Walnuts (chopped)
  • 1/2 cup Maple Syrup

Instructions 

  • Preheat oven to 350°F (180°C). Line and grease a loaf pan.
  • Beat eggs and sugar until pale. Add oil, orange juice, and vanilla; mix well.
  • Sift in flour, baking powder, and salt. Gently fold into batter.
  • Pour batter into pan, bake 10 min, sprinkle nuts, bake 25–30 min more.
  • While warm, poke holes and pour maple syrup over. Cool before slicing.

Notes

Ensure not to overmix the batter for a tender crumb.
