  • 473 ml chopped pecans
  • 220 grams brown sugar, packed
  • 3 large eggs
  • 90 ml corn syrup
  • 113 grams butter (for filling)
  • 110 grams toffee bits
  • 60 grams flour (for crust)
  • 50 grams granulated sugar
  • 22.5 ml sugar (additional for crust)
  • 113 grams butter, chopped (for streusel)
  • 90 ml butter-flavored Crisco
  • 59 ml ice water
  • 5 ml salt
  • 15 ml milk
  • 7.5 ml vanilla
  • 15 ml fresh lemon juice
  • 8 grams flour (for filling)
  • 2.5 ml salt (for filling)
  • 60 grams flour (for crust)
  • 55 grams additional flour

Instructions 

  • Whisk flour, sugar, and salt; cut in butter and Crisco until coarse crumbs form for crust.
  • Mix egg with ice water; form dough, roll out, and fit into a 9-inch pie dish. Chill.
  • Heat butter until golden and nutty aroma (~5 min); cool slightly.
  • Whisk eggs, add sugars, corn syrup, browned butter, milk, vanilla, salt, and flour; mix until smooth.
  • Fold in toffee bits and pecans; pour filling into crust. Bake at 400°F, then reduce to 350°F, bake 30-37 min, add streusel after 30 min.
  • Cool completely before slicing to set filling.

Notes

Ensure to shield crust edges during baking to prevent over-browning.
