Enjoy warm, buttery cornbread baked to perfection in a skillet, perfect as a side dish or snack.

Ingredients

Dry ingredients

  • 1 cup cornmeal
  • 1 cup all purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Wet ingredients

  • 1 cup milk
  • 1/4 cup butter (plus 1 tablespoon melted or vegetable oil)
  • 1 egg egg

Instructions 

  • Preheat oven to 425°F (220°C) and place a cast iron skillet inside to heat.
  • Mix dry ingredients in a bowl; add milk, melted butter, and egg, stirring until just combined.
  • Remove skillet, add 1 tablespoon of butter or oil, then pour batter into skillet.
  • Bake for 18-22 minutes until golden and a toothpick comes out clean.
  • Serve warm with butter.

Notes

For a richer flavor, use melted butter instead of oil.
