Ingredients

Meat

  • 2 pounds lean beef chuck, cut into chunks

Vegetables

  • 4 cups assorted summer vegetables (carrots, zucchini, bell peppers, and corn)
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Garnish

Instructions 

  • Season beef with salt and pepper, then brown in a skillet.
  • Sauté onions and garlic until translucent.
  • Combine beef, aromatics, tomatoes, broth, tomato paste, Worcestershire, thyme, and oregano in a slow cooker.
  • Add summer vegetables on top.
  • Cook on low for 6-8 hours, then adjust seasoning before serving.
