A hearty and comforting beef stew perfect for slow cooking, packed with tender meat and flavorful vegetables.

Ingredients

Meat

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium Yukon Gold potatoes, diced
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf bay leaf
  • to taste Salt and pepper
  • 2 tsp Worcestershire sauce

Instructions 

  • Sear beef in a skillet until browned, about 5 minutes.
  • Transfer beef and all ingredients to the slow cooker and stir to combine.
  • Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
  • Remove bay leaf, taste, and adjust seasoning before serving.

Notes

For extra flavor, add fresh herbs or a splash of red wine during cooking.
