A hearty and comforting beef stew perfect for slow cooking, packed with tender meat and flavorful vegetables.
Ingredients
Meat

beef chuck roast, cut into 1-inch cubes

carrots, sliced

Yukon Gold potatoes, diced

yellow onion, chopped

cloves
garlic, minced

low-sodium beef broth

tomato paste

dried thyme

bay leaf

Instructions
Sear beef in a skillet until browned, about 5 minutes.
Transfer beef and all ingredients to the slow cooker and stir to combine.
Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
Remove bay leaf, taste, and adjust seasoning before serving.
Notes
For extra flavor, add fresh herbs or a splash of red wine during cooking.
