A hearty and flavorful slow cooker dish featuring tender beef bites, roasted potatoes, and aromatic garlic butter sauce, perfect for a comforting meal.

Ingredients

Meat

  • 900 g beef stew meat, cut into bite-sized cubes

Vegetables

  • 450 g baby potatoes, halved or quartered if large

Dairy & Oils

  • 4 tbsp unsalted butter
  • 2 tbsp olive oil

Garlic & Broth

  • 6 cloves garlic, minced
  • 0.5 cup beef broth
  • 1 tbsp Worcestershire sauce

Herbs & Seasonings

  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Garnish

  • Fresh parsley chopped (for garnish)

Instructions 

  • Heat olive oil in a skillet, sear beef cubes 2-3 minutes per side, then transfer to slow cooker.
  • Melt butter in the same skillet, sauté garlic for 1 minute.
  • Pour in beef broth and Worcestershire sauce, scrape browned bits, add herbs, then pour over beef in slow cooker.
  • Add potatoes, top with remaining butter, cover, and cook on low 6-7 hours.
  • Adjust seasoning, garnish with parsley, and serve warm.

Notes

For extra flavor, add a splash of red wine or a dash of hot sauce before serving.
