A hearty and flavorful slow cooker dish featuring tender beef bites, roasted potatoes, and aromatic garlic butter sauce, perfect for a comforting meal.

Ingredients

Meat

  • 2 lbs pounds beef stew meat (cut into bite-sized cubes)

Vegetables

  • 1 lb pounds baby potatoes (halved or quartered if large)
  • 4 tbsp tablespoons unsalted butter
  • 6 cloves cloves garlic (minced)
  • 1/2 cup cup beef broth
  • 1 tbsp tablespoon Worcestershire sauce
  • 1 tsp teaspoon dried thyme
  • 1 tsp teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tbsp tablespoons olive oil

Garnish

  • to taste Fresh parsley, chopped (for garnish)

Instructions 

  • Heat olive oil in a skillet, sear beef cubes 2-3 minutes per side, then transfer to slow cooker.
  • In the same skillet, melt butter, sauté garlic for 1 minute, then add beef broth, Worcestershire sauce, thyme, and rosemary. Pour over beef in slow cooker.
  • Add potatoes to the slow cooker, top with remaining butter, and cook on low for 6-7 hours.
  • Adjust seasoning with salt and pepper, garnish with parsley, and serve warm.

Notes

For extra flavor, add a splash of red wine or a dash of hot sauce before serving.
