Ingredients

Meat

  • 2.5 lbs beef chuck roast, cut into large chunks
  • 2 tbsp olive oil (for searing, optional)
  • 6 tbsp unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried Italian herbs (or a mix of thyme, oregano, basil)
  • 0.5 tsp crushed red pepper flakes (optional)
  • 0.25 cup fresh parsley, chopped (plus more for garnish)
  • 2 lbs baby Yukon Gold potatoes, halved
  • 0.5 cup low-sodium beef broth
  • 1 medium onion, sliced (optional)
  • 1 cup carrots, chopped (optional)

Instructions 

  • Pat beef dry, season with salt and pepper. Optional: sear in hot oil until browned.
  • Place potatoes in slow cooker, add beef, onion, and carrots if using.
  • Melt butter, mix with garlic, herbs, red pepper flakes, and parsley. Pour broth over beef and potatoes, then drizzle with garlic butter.
  • Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until tender. Adjust seasoning as needed.
  • Serve beef and potatoes with sauce, garnished with parsley.

Notes

For extra flavor, let the sauce sit uncovered for 15 minutes to thicken or mash some potatoes into the broth.
