Instructions
Pat beef dry, season with salt and pepper. Optional: sear in hot oil until browned.
Place potatoes in slow cooker, add beef, onion, and carrots if using.
Melt butter, mix with garlic, herbs, red pepper flakes, and parsley. Pour broth over beef and potatoes, then drizzle with garlic butter.
Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until tender. Adjust seasoning as needed.
Serve beef and potatoes with sauce, garnished with parsley.
Notes
For extra flavor, let the sauce sit uncovered for 15 minutes to thicken or mash some potatoes into the broth.
