A delicious and hearty dish featuring bell peppers filled with seasoned meat and rice, cooked to perfection in a slow cooker.

Ingredients

Bell Peppers

  • 4 large bell peppers (red, yellow, or green)
  • 1 lb lean ground beef or turkey
  • 1 cup uncooked white or brown rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups tomato sauce
  • 1 tsp Italian seasoning
  • to taste Salt and pepper

Instructions 

  • Wash peppers, cut tops, and remove seeds.
  • Cook meat with onions and garlic until browned; drain excess fat.
  • Mix cooked meat, rice, tomato sauce, salt, pepper, and spices.
  • Stuff peppers with filling and place in slow cooker.
  • Pour remaining sauce over peppers; cook on low for 6 hours.
  • Remove and serve hot.

Notes

You can use any color of bell peppers and adjust seasoning to taste.
