Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breast diced into 1-inch cubes

Oil

  • 2 tbsp olive oil

Liquids

  • 0.25 cup lime juice freshly squeezed
  • 2 tbsp honey

Spices & Condiments

  • 1 tbsp chipotle peppers in adobo sauce minced
  • 1 tbsp taco seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper

Grains & Rice

  • 4 cups cooked cilantro lime rice

Canned Goods

  • 1 can 15-ounce black beans rinsed and drained

Vegetables & Fruits

  • 1.5 cups corn salsa
  • 1 cup pico de gallo
  • 1 large avocado sliced or diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 0.5 cup sour cream
  • 0.25 cup fresh cilantro chopped

Instructions 

  • Toss chicken with spices, lime juice, honey, and chipotle. Cook until browned.
  • Heat olive oil in a skillet and cook chicken until fully cooked, about 8-10 minutes.
  • Assemble bowls with rice, beans, corn salsa, pico de gallo, avocado, cheese, lettuce, sour cream, and cilantro.

Notes

For extra smoky flavor, char the chicken slightly before cooking.
