Ingredients

Dough

  • 1 ½ cups peeled & diced Granny Smith apples (about 2 apples)
  • ½ cup packed brown sugar (light or dark)
  • ¼ cup unsalted butter
  • 2 teaspoons ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon cool water
  • 2 ⅓ cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Filling

  • ½ cup packed brown sugar (light or dark)
  • 1 large egg + 1 egg yolk egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions 

  • Preheat oven to 350°F (175°C). Mix apples with ½ cup brown sugar, 1 tsp cinnamon, cornstarch, and water.
  • Cream butter and sugars; add egg, yolk, and vanilla. Mix until combined.
  • Gradually add flour, baking powder, and salt to form dough. Chill if needed.
  • Spoon apple filling onto dough portions, shape into cookies, and bake for 12 minutes.
  • Let cookies cool before serving. Enjoy!
