Instructions
Preheat oven to 350°F (175°C). Mix apples with ½ cup brown sugar, 1 tsp cinnamon, cornstarch, and water.
Cream butter and sugars; add egg, yolk, and vanilla. Mix until combined.
Gradually add flour, baking powder, and salt to form dough. Chill if needed.
Spoon apple filling onto dough portions, shape into cookies, and bake for 12 minutes.
