These delicious gluten-free granola bars are packed with nuts, dried fruit, and chocolate for a satisfying snack or breakfast on the go.
Ingredients

rolled oats

sliced almonds
(can also use chopped pecans, peanuts, hazelnuts, walnuts or a combo)

oat flour
(see note above)
1/4
cup
California prunes
(finely chopped about 5 whole prunes)

cup
unsweetened coconut
(shredded)
1/4
cup
puffed millet
(can also use puffed rice, amaranth or quinoa)

mini chocolate chips

chia seeds

real maple syrup

ripe banana
(mashed about 1 medium banana)

extra-virgin olive oil

real vanilla extract

bittersweet chocolate
(finely chopped)

Instructions
Mix dry ingredients in a bowl.
Combine wet ingredients and melted chocolate, then mix with dry ingredients.
Press mixture into a lined baking pan and refrigerate until firm.
Chop into bars and enjoy.
Notes
Store in an airtight container for up to a week.
