Ingredients

Vegetables

  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup cottage cheese (preferably low-fat or full-fat)
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes (optional)
  • ½ cup grated Parmesan cheese (or cheese of your choice)
  • 2 tablespoons olive oil (for frying)

Instructions 

  • Chop fresh spinach or thaw and drain frozen spinach; mix with cottage cheese.
  • Add egg to the spinach and cottage cheese mixture; whisk until smooth.
  • In a separate bowl, whisk together flour, baking powder, spices, salt, pepper, and red pepper flakes.
  • Gradually fold dry ingredients into wet mixture to form a thick batter.
  • Heat olive oil in a skillet; drop batter spoonfuls and cook 3-4 minutes per side until golden.
  • Transfer to paper towels, garnish with herbs, and serve warm.

Notes

Ensure excess moisture is removed from spinach to prevent sogginess.
