Instructions
Cook rice according to package instructions; set aside.
Cook chicken in olive oil with 1.25 tbsp taco seasoning until browned and cooked through, about 6-8 minutes. Remove from skillet.
Sauté peppers for 4-5 minutes, then add corn, beans, tomatoes, and cilantro. Stir to combine.
Add rice, chicken, and remaining taco seasoning; simmer 3-4 minutes until heated through.
Serve in bowls topped with extra cilantro, if desired.
Notes
Feel free to customize with your favorite toppings or add hot sauce for extra flavor.
