A flavorful and colorful bowl combining seasoned chicken, rice, and fresh vegetables for a quick, satisfying meal.

Ingredients

Grains

  • 1.25 cup Success® Whole Grain Brown Rice (or about 1¼ cup dry rice of choice)

Proteins

  • 3 medium chicken breasts (cut into chunks)

Fats & Oils

  • 2 tablespoons olive oil

Seasonings

  • 1.25 ounce taco seasoning (divided)

Vegetables

  • 0.5 each green bell pepper (diced)
  • 0.5 each red bell pepper (diced)
  • 0.5 each yellow bell pepper (diced)
  • 1 cup corn (fresh or frozen)
  • 1 can black beans (15 ounce, drained and rinsed)
  • 1 can ro-tel diced tomatoes and green chilies (10 ounce)
  • 0.25 cup fresh cilantro (chopped)

Instructions 

  • Cook rice according to package instructions; set aside.
  • Cook chicken in olive oil with 1.25 tbsp taco seasoning until browned and cooked through, about 6-8 minutes. Remove from skillet.
  • Sauté peppers for 4-5 minutes, then add corn, beans, tomatoes, and cilantro. Stir to combine.
  • Add rice, chicken, and remaining taco seasoning; simmer 3-4 minutes until heated through.
  • Serve in bowls topped with extra cilantro, if desired.

Notes

Feel free to customize with your favorite toppings or add hot sauce for extra flavor.
