A flavorful and easy one-pan dish combining ground turkey, vegetables, and spices, topped with cheese and garnished with scallions and lime.

Original Rotel (Can sub mild Rotel if you don't want spicy)

black beans, (rinsed and drained)

Instructions
Heat oil in a large skillet over medium-high heat.
Saute onion and bell pepper for 2-3 minutes, then add garlic and cook 30 seconds.
Add ground turkey and cook until browned, about 5 minutes. Drain if needed.
Stir in spices, cook 2 minutes, then add Rotel, chiles, beans, corn, rice, and 1/2 cup cheese. Cook 2 minutes.
Top with remaining cheese, cover, and turn off heat. Let melt for 5 minutes. Garnish with scallions, lime juice, and tortilla chips before serving.
Notes
For a spicier dish, use more chipotle powder or spicy Rotel.
