Southwest Rice and Ground Turkey Skillet Recipe

A flavorful and easy one-pan dish combining ground turkey, vegetables, and spices, topped with cheese and garnished with scallions and lime.

Ingredients

Oil and Vegetables

  • 1 Tablespoon Olive oil
  • 0.5 cup finely diced onion
  • 1 cup finely diced red bell pepper
  • 2 cloves garlic, (minced)
  • 1 pound Ground Turkey
  • 1 Teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.25 teaspoon Chipotle powder (can sub same amount of chili powder if you don't want spicy)
  • 1 teaspoon dried cilantro
  • 1 10 ounce can Original Rotel (Can sub mild Rotel if you don't want spicy)
  • 1 4 ounce can mild diced green chiles
  • 1 14 ounce can black beans, (rinsed and drained)
  • 1 cup frozen corn
  • 2 cups cooked rice
  • 1.5 cups shredded cheddar cheese, (divided)

Garnishes

  • to taste N/A Chopped scallions (for garnish)
  • to taste N/A lime juice (for serving)
  • to taste N/A Tortilla chips (for garnish)

Instructions 

  • Heat oil in a large skillet over medium-high heat.
  • Saute onion and bell pepper for 2-3 minutes, then add garlic and cook 30 seconds.
  • Add ground turkey and cook until browned, about 5 minutes. Drain if needed.
  • Stir in spices, cook 2 minutes, then add Rotel, chiles, beans, corn, rice, and 1/2 cup cheese. Cook 2 minutes.
  • Top with remaining cheese, cover, and turn off heat. Let melt for 5 minutes. Garnish with scallions, lime juice, and tortilla chips before serving.

Notes

For a spicier dish, use more chipotle powder or spicy Rotel.
