Ingredients

Vegetables

  • 2 cups chopped carrots
  • 1 cup chopped onion
  • 1 cup red lentils, rinsed

Liquids

  • 4 cups vegetable broth (or water)

Aromatics & Spices

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon olive oil

Instructions 

  • Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until translucent.
  • Add carrots, ginger, cumin, coriander, and red pepper flakes; cook for 2-3 minutes.
  • Pour in vegetable broth and add rinsed lentils. Bring to a boil, then reduce heat and simmer for 25 minutes.
  • Use an immersion blender to puree the soup until smooth. Season with salt and pepper.
  • Garnish with fresh cilantro or parsley before serving.
