A quick and flavorful breakfast skillet combining spicy chorizo, potatoes, green chiles, and eggs, ready in just 25 minutes.

Ingredients

Meat

  • 1 lb chorizo sausage

Vegetables

  • 1 cup diced potatoes
  • 1/2 cup chopped onion
  • 1/2 cup diced green chiles

Dairy

  • 1/2 cup shredded cheese
  • 1 tbsp olive oil
  • to taste Salt and pepper

Eggs

  • 4 large eggs

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Add chorizo and cook until browned.
  • Add potatoes and onion, cook until tender.
  • Stir in green chiles and create wells for eggs.
  • Crack eggs into wells, cover, and cook until eggs are done. Top with cheese and serve.

Notes

For extra flavor, add chopped cilantro or hot sauce before serving.
