A quick and flavorful breakfast skillet combining spicy chorizo, green chiles, and eggs for a satisfying start to your day.

Ingredients

Meat

  • 1 lb chorizo sausage
  • 1 cup diced potatoes
  • 1/2 cup chopped onion
  • 1/2 cup diced green chiles
  • 4 large eggs
  • 1/2 cup shredded cheese
  • 1 tbsp olive oil
  • to taste Salt and pepper

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Add chorizo and cook until browned, then add potatoes and onion; cook until tender.
  • Stir in green chiles, create wells, and crack eggs into them.
  • Cover and cook until eggs are done to your liking.
  • Sprinkle cheese on top, let melt, then serve hot.

Notes

For a milder flavor, reduce the amount of green chiles.
