Ingredients

Spices and Sauces

  • 1 teaspoon cumin
  • 0.5 cup salsa
  • 1 teaspoon chili powder

Vegetables

  • 1 medium onion, chopped
  • 1 green bell pepper, diced green bell pepper
  • 1 red bell pepper, diced red bell pepper

Grains and Legumes

  • 3 cups refried beans
  • 1 cup cooked brown rice

Dairy

  • 0.5 cup shredded cheddar cheese

Bread and Wraps

  • 6 whole wheat tortillas whole wheat tortillas

Oils and Seasonings

  • 2 Tablespoons olive oil

Instructions 

  • Preheat oven to 375°F (190°C) and line a baking sheet with foil.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced peppers and chopped onion; cook until softened, about 10 minutes.
  • Warm refried beans in a pan over medium heat, stirring in cumin and chili powder.
  • Spread seasoned beans on each tortilla, add rice, sautéed vegetables, salsa, and cheese. Roll up burritos and place seam-side down on the baking sheet. Brush with remaining olive oil.
  • Bake for 15 minutes until golden and crispy. Serve warm.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime before serving.
