Spicy Korean Gochujang Noodles

Enjoy a flavorful and spicy Korean-inspired noodle dish with ground meat and a rich gochujang sauce.

Ingredients

Meat

  • 1 pound ground beef, turkey or chicken

Noodles

  • 12 ounces rice noodles or noodles of choice

Sauce ingredients

  • 0.25 cup low sodium gluten free soy sauce (tamari) (check ingredients for gluten)
  • 0.25 cup gochujang paste (check ingredients for gluten)
  • 2 tablespoons coconut cream
  • 2 teaspoons tomato paste
  • 2 tablespoons water
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh grated ginger
  • 0.5 teaspoon red pepper flakes (more or less as desired for spice)

Instructions 

  • Cook noodles in salted boiling water according to package instructions, drain, then toss with butter to prevent sticking.
  • Saute ground meat in a large skillet until cooked through.
  • Whisk together all sauce ingredients in a bowl and set aside.
  • Mix half of the sauce with the noodles, then add cooked meat and remaining sauce. Toss to coat and heat briefly.
  • Serve garnished with chopped scallions, sesame seeds, cilantro, and red pepper flakes.

Notes

Adjust spice level with red pepper flakes to taste.
