Instructions
Cook the ground beef in a skillet with soy sauce, sesame oil, gochujang, brown sugar, ginger, garlic, red pepper flakes, and vegetable oil until browned and fragrant.
Prepare the kimchi slaw by mixing napa cabbage, kimchi, carrots, cucumber, rice vinegar, sesame oil, honey, salt, and sugar in a bowl.
Serve the beef over steamed rice topped with sliced green onions, sesame seeds, and optional fried egg, with kimchi slaw on the side and lime wedges for extra zing.
