Ingredients

Meat

  • 1 lb ground beef preferably 85 15 for flavor
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang Korean chili paste
  • 1 tablespoon brown sugar
  • 2 teaspoons rice vinegar
  • 1 teaspoon grated ginger
  • 3 cloves garlic minced
  • 1 teaspoon crushed red pepper flakes (optional for extra heat)
  • 1 tablespoon vegetable oil
  • 2 green onions thinly sliced plus more for garnish

Garnish

  • Toasted sesame seeds Toasted sesame seeds for garnish
  • 1 cup napa cabbage finely shredded
  • 0.5 cup kimchi chopped
  • 0.5 cup carrots julienned
  • 0.25 cup cucumber thinly sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or maple syrup
  • Pinch salt
  • Pinch sugar

Steamed Rice

  • Steamed white rice or jasmine rice Steamed white rice or jasmine rice
  • Optional fried egg Fried egg on top
  • Lime wedges Lime wedges for added zing

Instructions 

  • Cook the ground beef in a skillet with soy sauce, sesame oil, gochujang, brown sugar, ginger, garlic, red pepper flakes, and vegetable oil until browned and fragrant.
  • Prepare the kimchi slaw by mixing napa cabbage, kimchi, carrots, cucumber, rice vinegar, sesame oil, honey, salt, and sugar in a bowl.
  • Serve the beef over steamed rice topped with sliced green onions, sesame seeds, and optional fried egg, with kimchi slaw on the side and lime wedges for extra zing.

Notes

Adjust the spice level with red pepper flakes and add a fried egg for extra richness.
