These savory bites combine spinach and cheeses for a delicious appetizer or snack, baked to golden perfection.

Ingredients

  • 2 tablespoons butter
  • 1 small yellow onion (chopped)
  • 1 clove garlic (minced)
  • 2 large eggs (beaten)
  • 1 cup ricotta cheese (low or full fat)
  • 1/2 cup mozzarella cheese (shredded)
  • 1/2 cup parmesan cheese (grated)
  • 10 ounce frozen chopped spinach (defrosted and drained well)
  • 1/4 teaspoon kosher salt

Instructions 

  • Preheat oven to 350°F (175°C).
  • Melt butter and cook onions for 4 minutes until tender, then add garlic and cook 1 minute. Cool.
  • Whisk eggs, then stir in ricotta, mozzarella, and parmesan cheeses.
  • Mix in drained spinach, salt, and cooled onion-garlic mixture.
  • Pour into greased mini muffin cups and bake for 20-25 minutes until golden and set.

Notes

Use a sharp knife to release bites if needed.
