These savory bites combine spinach and cheeses for a delicious appetizer or snack, baked to golden perfection.
Ingredients

Instructions
Preheat oven to 350°F (175°C).
Melt butter and cook onions for 4 minutes until tender, then add garlic and cook 1 minute. Cool.
Whisk eggs, then stir in ricotta, mozzarella, and parmesan cheeses.
Mix in drained spinach, salt, and cooled onion-garlic mixture.
Pour into greased mini muffin cups and bake for 20-25 minutes until golden and set.
Notes
Use a sharp knife to release bites if needed.
