A visually stunning and flavorful bread filled with fresh herbs and greens, perfect for sharing and special occasions.

Ingredients

Dough

  • 0.25 cup warm water
  • 1 tsp traditional active dry yeast
  • 0.5 cup warm milk
  • 2 tbsp sugar (plus a pinch)
  • 2 eggs divided
  • 4 tbsp butter divided
  • 2.5 cups all-purpose flour (plus extra as needed)
  • 1 tsp kosher salt divided

Filling

  • 2 cups baby arugula (loosely packed)
  • 1 cup fresh basil leaves (loosely packed)
  • 3 cloves minced garlic (divided)
  • 0.25 tsp pepper
  • 1 zest lemon
  • 150 g boursin cheese
  • 0.5 cup finely grated parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions 

  • Activate the yeast by mixing warm water with a pinch of sugar and letting it bubble for 5 minutes.
  • Combine warm milk, sugar, 1 beaten egg, 1 tbsp melted butter, and yeast in a mixer. Add flour and salt, then knead until smooth, adding more flour if sticky. Let rise for 1-1.5 hours until doubled.
  • Pulse greens, garlic, lemon zest, salt, and pepper in a food processor. Add boursin and pulse until smooth. Chill until needed.
  • Divide risen dough into three, roll into 10-inch circles, layer with filling and parmesan, then cut into strips. Twist strips to form a star shape, let rise 30 minutes.
  • Preheat oven to 350°F. Brush assembled star with egg wash and bake for 20-25 minutes until golden. Melt remaining butter, sauté garlic, add parsley, and brush over warm bread.

Notes

Brushing with garlic butter while warm enhances flavor. Serve warm for best taste.
