This vibrant steak burrito bowl combines seasoned flank steak with fresh vegetables and rice for a quick, satisfying meal packed with flavor.

Ingredients

Meat

  • 1 lb flank steak (Marinate with spices and garlic)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper

Rice and Beans

  • 1 cup white or brown rice
  • 2 cups water
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen

Vegetables and Toppings

  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime juice
  • 1 avocado sliced
  • 1/2 cup shredded cheese

Additional Toppings

  • to taste Sour cream and salsa (for serving)

Instructions 

  • Combine olive oil, garlic, cumin, chili powder, salt, and pepper; marinate steak for 30 minutes.
  • Cook rice in boiling water for 18-20 minutes until tender; fluff and set aside.
  • Grill steak 4-5 minutes per side; rest and slice thinly.
  • Mix rice, beans, corn, tomatoes, onion, cilantro, and lime juice.
  • Assemble bowls with rice mixture, sliced steak, avocado, cheese, and toppings.
  • Serve immediately and enjoy!

Notes

For extra flavor, marinate the steak longer or add your favorite hot sauce.
