A flavorful and customizable burrito bowl inspired by Chipotle, featuring seasoned steak, fresh veggies, and tasty toppings.

Ingredients

Meat and Seasonings

  • 1 lbs lean steak (such as flank steak or sirloin) ((4 oz per bowl))
  • 1-2 tbsp avocado oil
  • 2 tsp chili powder
  • 1.5 tsp ground cumin
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp oregano
  • to taste Salt and pepper

Base and Toppings

  • 1 cup jasmine rice or quinoa (cooked)
  • 2 cups shredded lettuce
  • 1 15 oz can black beans (drained and rinsed)
  • 1/3 cup shredded cheese (reduced-fat or dairy-free)
  • 1 red onion diced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1/4 cup guacamole
  • 1/2 cup pico de gallo
  • 1/4 cup fresh cilantro (chopped)

Additional

  • to serve Lime wedges
  • 1 cup light sour cream or Greek yogurt
  • 1-2 whole limes (juice and zest)
  • to taste salt

Instructions 

  • Preheat grill or pan, season steak with spices, and cook until desired doneness. Rest and slice.
  • Warm black beans and corn in separate pans, season lightly.
  • Mix sour cream with lime juice, zest, and salt to make lime crema.
  • Assemble bowls starting with lettuce, then add rice, corn, beans, cheese, onion, guacamole, lime crema, and cilantro.

Notes

Adjust seasoning and toppings to taste. Use fresh ingredients for best flavor.
