Ingredients

Meat

  • 2 pounds sirloin or flank steak

Oil & Liquids

  • 3 tablespoons olive oil
  • 3 tablespoons lime juice (about 2 limes)
  • ¼ cup chipotle peppers in adobo sauce
  • 3 cloves garlic minced
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon cumin
  • ½ teaspoon dried oregano

Vegetables

  • 2 small bell peppers thinly sliced
  • ½ red onion red onion thinly sliced

Grains & Legumes

  • ½ cup rice (brown or jasmine, uncooked)
  • ½ cup corn kernels
  • ½ cup black beans drained and rinsed
  • ½ cup chopped tomatoes

Toppings & Extras

  • 2 small avocados (optional for guacamole)
  • ½ teaspoon salt for guacamole
  • 3 tablespoons chopped cilantro
  • 1-2 jalapeños finely diced (optional)
  • optional to taste shredded cheese

Instructions 

  • Marinate the steak with olive oil, lime juice, chipotle peppers, garlic, cumin, oregano, salt, and black pepper for at least 10 minutes.
  • Cook the rice according to package instructions, about 20 minutes.
  • Heat a skillet over medium-high heat, sear the steak 3-5 minutes per side, then rest and slice thinly.
  • Sauté bell peppers and onions in the same skillet for about 6 minutes until tender and charred.
  • Prepare guacamole by mashing avocados, adding salt, cilantro, and jalapeños.
  • Assemble bowls with rice, sliced steak, sautéed vegetables, corn, black beans, tomatoes, cheese (if using), and a dollop of guacamole. Garnish with chopped cilantro.
