¼cupchipotle peppers in adobo sauce

½teaspoondried oregano

2smallbell peppers thinly sliced
½red onionred onion thinly sliced

½cuprice (brown or jasmine, uncooked)
½cupcorn kernels
½cupblack beans drained and rinsed
½cupchopped tomatoes

2smallavocados (optional for guacamole)

Instructions
Marinate the steak with olive oil, lime juice, chipotle peppers, garlic, cumin, oregano, salt, and black pepper for at least 10 minutes.
Cook the rice according to package instructions, about 20 minutes.
Heat a skillet over medium-high heat, sear the steak 3-5 minutes per side, then rest and slice thinly.
Sauté bell peppers and onions in the same skillet for about 6 minutes until tender and charred.
Prepare guacamole by mashing avocados, adding salt, cilantro, and jalapeños.
Assemble bowls with rice, sliced steak, sautéed vegetables, corn, black beans, tomatoes, cheese (if using), and a dollop of guacamole. Garnish with chopped cilantro.
