A delicious and wholesome baked oatmeal combining strawberries and bananas for a naturally sweet breakfast.

Ingredients

Dry ingredients

  • 2 1/2 cups rolled oats
  • 2 teaspoons cinnamon
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon nutmeg

Wet ingredients

  • 1.5 cups milk of your choice
  • 1 cup mashed very ripe bananas
  • 1/4 cup maple syrup or honey (if bananas aren't very ripe, use more sweetener)
  • 1 cup chopped strawberries

Instructions 

  • Preheat oven to 350°F (175°C). Spray an 8x8 or 9x9 inch baking dish.
  • Mix dry ingredients in a large bowl. In a separate bowl, whisk wet ingredients until combined.
  • Combine wet and dry mixtures, then fold in chopped strawberries.
  • Pour batter into the prepared dish and bake for 30-40 minutes until a toothpick comes out clean.
  • Let cool for 10 minutes before serving. Store leftovers in the refrigerator.

Notes

For extra sweetness, add more honey or maple syrup as needed.
