Ingredients

Dry ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Cinnamon (Optional)
  • 0.5 teaspoon Nutmeg (Optional)

Wet ingredients

  • 3 ripe bananas Ripe bananas
  • 0.25 cup Granulated sugar
  • 0.33 cup Brown sugar (packed)
  • 2 eggs Eggs (room temperature)
  • 1.5 teaspoons Vanilla extract
  • 0.25 cup Vegetable oil (or melted butter)
  • 1 cup Yogurt or sour cream or Greek dairy-free yogurt
  • 1 cup Fresh strawberries (diced)
  • 1 cup Chopped walnuts or pecans (Optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  • Mix dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Mash bananas and combine with sugars, oil, eggs, vanilla, and yogurt; mix well.
  • Gradually add dry ingredients to wet, stirring gently. Fold in most strawberries and nuts, reserving some for topping.
  • Fill muffin cups ¾ full with batter, top with remaining strawberries, and bake for 20-25 minutes. Cool before serving.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the dry ingredients.
