Ingredients
Dry ingredients
1.5cupsall-purpose flour
3.5teaspoonsbaking powder
0.5teaspoonkosher salt
0.25cupgranulated sugar
Wet ingredients
1mediumripe banana, mashed(about ½ cup)
1cupbuttermilk
1largeegg(room temperature)
3tablespoonsunsalted butter, melted and cooled

1cupfresh strawberries, finely diced

Instructions
Whisk together dry ingredients in a large bowl.
Mash banana and mix with buttermilk, egg, and melted butter in a medium bowl.
Combine wet and dry ingredients, stirring gently until just mixed. Fold in diced strawberries.
Heat a nonstick skillet over medium heat. Pour ⅓ cup batter for each pancake and cook 3-4 minutes until golden, then flip and cook another 3-4 minutes.
Serve warm with maple syrup and whipped cream.
Notes
For extra flavor, add a splash of vanilla extract to the batter.
