Instructions
Prepare strawberries by removing tops and measuring 200g.
Place strawberries and all ingredients (except coating coconut) in a food processor and blend until a fine, rollable dough forms.
Refrigerate mixture for 30 minutes to make shaping easier.
Use a damp tablespoon to scoop and roll mixture into balls, then coat in desiccated coconut.
Refrigerate for 2 hours or overnight before serving.
