  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 cup diced strawberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 cup milk
  • 1 large egg

Instructions 

  • Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  • Mix cottage cheese, oats, strawberries, vanilla, honey, baking powder, cinnamon, milk, and egg until combined.
  • Spoon batter into muffin tin, filling each about 3/4 full.
  • Bake for 15-18 minutes until golden and a toothpick comes out clean.
  • Cool for a few minutes before transferring to a wire rack.
