Enjoy these delicious and healthy strawberry oat waffles, perfect for a quick breakfast or brunch.

Ingredients

Dry ingredients

  • 1 cup oat flour

Wet ingredients

  • 1/2 cup plant-based milk
  • 3 Tbsp oil
  • 1 egg egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup chopped California strawberries (fresh or frozen)

Toppings (optional)

  • pure maple syrup (optional)
  • fresh California strawberries (optional)

Instructions 

  • Preheat mini waffle maker and spray with cooking spray.
  • Mix oat flour, baking powder, vanilla, and egg, then add milk and oil until smooth.
  • Gently fold in chopped strawberries.
  • Pour 1/2 cup batter into waffle maker and cook for 2-3 minutes until golden.
  • Repeat with remaining batter. Serve with optional toppings.

Notes

For extra flavor, top with fresh strawberries and a drizzle of maple syrup.
