A delicious and healthy homemade protein bar packed with strawberries and plant-based ingredients, perfect for on-the-go snacking.

Ingredients

Dry ingredients

  • 2 cups oat flour
  • 1 cup vanilla protein powder

Wet ingredients

  • 1/4 cup maple syrup
  • 1/2 cup almond butter
  • 1/2 teaspoon vanilla extract
  • 2–4 tablespoons dairy-free milk (as needed)

Additional

  • 1/3 cup freeze-dried strawberries (crushed)
  • Optional extra crushed strawberries for topping

Instructions 

  • Mix the dry ingredients: In a large bowl, combine oat flour, protein powder, and crushed strawberries.
  • Add wet ingredients: Stir in almond butter, maple syrup, vanilla extract, and enough dairy-free milk until a soft dough forms.
  • Press into a pan: Line an 8x8-inch pan with parchment and press the mixture evenly. Add extra strawberries on top if desired.
  • Chill and cut: Refrigerate for 20–30 minutes until firm, then cut into bars. Store in an airtight container in the fridge.
