Ingredients

Protein

  • 1 lb chicken pieces, or chicken fillet

Grains

  • 3 cups cooked white rice

Vegetables

  • 1 cup corn kernels (grilled or charred)
  • 1/2 cup diced red onion
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 1 tsp chili powder
  • 1 lime cut into wedges

Instructions 

  • Season chicken with salt, pepper, and chili powder. Grill or pan-sear until cooked through, then slice.
  • Toss corn with mayonnaise, chili powder, lime juice, and a pinch of salt.
  • Assemble bowls with rice, chicken, corn mixture, red onion, cotija cheese, and cilantro. Serve with lime wedges.

Notes

For extra flavor, add avocado or hot sauce to your bowl.
