Instructions
Season chicken with salt, pepper, and chili powder. Grill or pan-sear until cooked through, then slice.
Toss corn with mayonnaise, chili powder, lime juice, and a pinch of salt.
Assemble bowls with rice, chicken, corn mixture, red onion, cotija cheese, and cilantro. Serve with lime wedges.
Notes
