Delightful no-bake treats with oats, cocoa, and coconut, perfect for a quick sweet fix.
Ingredients
Dough

rolled oats (not instant!)

white sugar (or half brown sugar for caramel vibes)

unsweetened cocoa powder (Dutch-processed = extra rich)

unsalted butter, softened

unsweetened baking chocolate, melted (or 6 tbsp cocoa + 2 tbsp oil)

strong coffee (or chai tea)

vanilla extract

unsweetened coconut flakes (for rolling)
Instructions
Mix: In a large bowl, whisk oats, sugar, and cocoa. Add butter, melted chocolate, coffee, and vanilla. Mix until combined and sticky.
Chill: Cover and refrigerate dough for 15–30 minutes to firm up.
Roll: Scoop 1 tbsp of dough, roll into balls, then coat in coconut flakes. Gently press to make flakes stick.
Set: Chill the balls for at least 1 hour for best texture. Freeze for 20 mins if in a hurry.
Notes
Keep the dough refrigerated to prevent sticking and ensure easy rolling.
