Delightful no-bake treats with oats, cocoa, and coconut, perfect for a quick sweet fix.

Ingredients

Dough

  • 4 cups rolled oats (not instant!)
  • 1.25 cups white sugar (or half brown sugar for caramel vibes)
  • 0.5 cup unsweetened cocoa powder (Dutch-processed = extra rich)
  • 1 cup unsalted butter, softened
  • 2 oz unsweetened baking chocolate, melted (or 6 tbsp cocoa + 2 tbsp oil)
  • 2 tbsp strong coffee (or chai tea)
  • 1 tsp vanilla extract
  • cup unsweetened coconut flakes (for rolling)

Instructions 

  • Mix: In a large bowl, whisk oats, sugar, and cocoa. Add butter, melted chocolate, coffee, and vanilla. Mix until combined and sticky.
  • Chill: Cover and refrigerate dough for 15–30 minutes to firm up.
  • Roll: Scoop 1 tbsp of dough, roll into balls, then coat in coconut flakes. Gently press to make flakes stick.
  • Set: Chill the balls for at least 1 hour for best texture. Freeze for 20 mins if in a hurry.

Keep the dough refrigerated to prevent sticking and ensure easy rolling.
